Directions

  1. Gently warm the kefir and place it in a bowl along with the maple syrup and yeast.
  2. Stir and let it sit for 10 minutes.
  3. Add the flour and optionally the salt, and stir.
  4. Knead thoroughly by hand until the dough comes together.
  5. Cover and let it rise for 90 minutes.
  6. Divide the dough into 8 equal pieces, shape them into balls, and transfer to a non-stick baking tray.
  7. Cover and let them rise for another 30 minutes.
  8. Optionally, brush with an egg wash.
  9. Bake at 175掳C for 12-15 minutes.

Notes

  • In this recipe, 1 serving is considered to be 1 bun.
  • Warm the kefir slightly before using it.
  • You can use zea flour (emmer flour).
  • You can sprinkle with sesame seeds if you brush with egg wash.
  • Oven setting: fan only or fan assisted with top and bottom heating elements.
