This watermelon pizza turns fresh watermelon into an easy summer dessert or snack. The wedges are topped with a creamy mixture of fresh unsalted anari, cottage cheese, honey and optional vanilla protein powder, then served with extra honey and crushed walnuts if desired.

Directions

  1. Cut two round watermelon slices approximately 2–3 cm thick and divide each slice into six pieces.
  2. Add the anari, cottage cheese, honey, stevia, optional protein powder and optional vanilla extract to a blender. Blend until smooth.
  3. Transfer the mixture to a bag. Optionally, refrigerate it for 30–45 minutes to help it firm up.
  4. Cut off one corner of the bag to create a small piping bag and distribute the mixture over the 12 watermelon pieces.
  5. Optionally, serve each piece with additional honey and crushed walnuts.
