Directions

  1. Place the walnuts and oats in a blender and crush them.
  2. Transfer to a bowl along with the protein powder, stevia, cinnamon, and cloves, and mix.
  3. Open the phyllo sheets and carefully cut them to the shape of the pan.
  4. Brush the pan with a layer of melted butter.
  5. Layer half of the phyllo sheets, drizzling butter between each one.
  6. Transfer the filling from the bowl and spread it in the pan.
  7. Repeat the process for the remaining phyllo sheets.
  8. Carefully score into small pieces.
  9. Pour the remaining butter into the score marks.
  10. Bake at 150°C for approximately 90 minutes.
  11. When it is nearly finished baking, boil the water with the stevia, then add the juice and honey.
  12. Boil for another 3 minutes and pour the hot syrup over the hot baklava.

Notes

  • In this recipe, 1 serving is considered to be 1 piece.
  • Pan dimensions: 37x29x5cm.
  • Oven settings: heating elements.
  • Protein powder is optional. If you prefer not to use it, replace it with 90g of crushed walnuts.
  • The phyllo sheets are significantly larger than my pan, so I only use 280g.
  • Before scoring the pastry, you can place it in the refrigerator for a short while to let the butter chill, which will make the process easier.
