This traditional high-protein palouzes is prepared by extracting fresh must from green grapes and slowly thickening it with corn starch. Vanilla protein powder is added near the end of cooking, together with rose water, creating ten servings of this classic Cypriot dessert with additional protein.

Directions

  1. Remove the grapes from the stems and blend them in batches.
  2. Pass the blended grapes through a strainer into a large bowl, separating the juice from the solids.
  3. Transfer 350 ml of the grape juice to one bowl and 400 ml to a second bowl. Pour the remaining juice into a large saucepan.
  4. Add the corn starch to the first bowl and mix until completely smooth and free of lumps.
  5. Add the protein powder to the second bowl and mix until completely smooth and free of lumps.
  6. Heat the grape juice in the saucepan over medium heat. Once it reaches a gentle boil, without boiling vigorously, add the corn starch mixture from the first bowl.
  7. Cook patiently, stirring regularly to prevent the mixture from sticking to the bottom of the saucepan, until it begins to thicken.
  8. Once large bubbles appear and the mixture offers resistance while stirring, add the protein mixture from the second bowl and the rose water.
  9. Cook for another 2–3 minutes while stirring, then remove the saucepan from the heat.
  10. Serve immediately or transfer to a large baking dish. Allow it to cool completely, cover and refrigerate until the following day so it can set.
