  1. Cut the chicken into small cubes and place them in a bowl.
  2. Add the yogurt, juice, olive oil, salt, garam masala, paprika, pepper, cumin, and turmeric; mix well, cover, and let marinate for at least 30 minutes.
  3. For the rice, place the rice, water, and salt in a small pot and stir.
  4. Boil over medium-high heat, stirring occasionally; just before the liquid evaporates completely, cover and remove from the heat.
  5. For the tikka masala, saut茅 the chicken in a pan over high heat for 6-8 minutes or until it changes color, then remove it from the pan.
  6. In the same pan over medium-high heat, add the olive oil and saut茅 the onion for 1-2 minutes.
  7. Add the garlic and ginger and saut茅 for another 1-2 minutes.
  8. Add the tomato paste, salt, garam masala, paprika, pepper, and cumin, and stir.
  9. Lower the heat to medium-low, add the chopped tomatoes, stir, and cook until the sauce begins to thicken.
  10. Transfer the sauce to a blender, add the milk and cottage cheese, and blend until smooth and homogenized.
  11. Transfer the sauce back into the pan and simmer over low heat.
  12. Once it reaches a boil, add the chicken, stir, and remove from the heat.

Notes

  • For top-tier flavor, you can let the chicken marinate overnight instead of for only 30 minutes.
