This strawberry panna cotta combines vanilla protein yogurt, skimmed milk and vanilla protein powder for a light, high-protein dessert. It is topped with a simple homemade strawberry sauce and makes eight servings.

Directions

1. Dissolve the gelatin in the water.

2. Add the yogurt, milk, vanilla extract, stevia and protein powder to a saucepan. Stir and heat over medium-low heat.

3. Stir occasionally. Once the mixture is hot but not boiling, remove it from the heat.

4. Microwave the gelatin for 30 seconds until liquid, then add it to the saucepan.

5. Stir until incorporated and transfer the mixture to a mould.

6. Allow it to cool, then refrigerate for at least five hours or until set.

7. For the strawberry sauce, cook the strawberries, lemon juice and stevia over medium heat.

8. Stir occasionally. Once the strawberries have softened, blend them using an immersion blender or regular blender, then return the mixture to the saucepan.

9. Remove from the heat once the strawberry sauce has thickened.
