  1. Pat the meat completely dry with paper towels and season with salt and pepper.
  2. Preheat the pan well over high heat and sear one side of the steak for 3 minutes.
  3. Flip, cook for another 2 1/2 minutes, and in the last minute, add the butter, wait for it to melt, and baste the steak.
  4. Remove from the pan and let it rest for 5-8 minutes.
  5. In the same pan, sauté the mushrooms for 1-2 minutes, add the onion, and sauté for another 1-2 minutes.
  6. Lower the heat completely, wait for the pan's temperature to drop, add the water, mustard, yogurt, and salt, and stir.
  7. Slice the steak into strips, optionally warm the bread, and add the arugula, the meat, the sauce, and the cheese.

Notes

  • If you want to reduce the calories, use fillet or striploin as they are cuts with less fat.
  • The cooking I have done is medium and the thickness of the meat was about 1.5-2cm.
