  1. 1. Carefully remove the ink sacs from the cuttlefish and empty them into a small bowl.
  2. 2. Add the water and stir very well to dissolve the ink.
  3. 3. Cut the cuttlefish into small cubes and set aside.
  4. 4. Boil water in a pot and cook the pasta for 2 minutes less than the package instructions.
  5. 5. While the pasta is cooking, add the olive oil to a pan and sauté the garlic over medium heat.
  6. 6. Add the cuttlefish, salt, pepper, and red pepper flakes, stir, and sauté for 3-4 minutes or until the liquids have evaporated.
  7. 7. Drain the pasta and transfer it to the pan.
  8. 8. Add the ink and toss until everything is evenly coated.
  9. 9. Optionally, serve with lemon juice and crumbled feta.

Notes

  • -You can ask your fishmonger to clean the cuttlefish for you and set the ink sacs aside separately.
  • -The macronutrients do not include the lemon juice and the crumbled feta.
