  1. Saut茅 the leek and spinach in a pan over high heat until the liquids have evaporated.
  2. In a bowl, whisk 2 eggs, add the feta, anari cheese, salt, and pepper, and stir.
  3. Add the leek and spinach to the bowl and mix until homogenized.
  4. Brush a non-stick baking tray with the beaten egg wash and place 3 phyllo sheets, brushing with egg between each layer.
  5. Transfer the filling and spread it evenly.
  6. Fold the edges inward and add 2 more phyllo sheets on top, brushing them with egg before spreading.
  7. Lightly score into 20 pieces.
  8. Bake at 180掳C for 25-30 minutes.

Notes

  • In this recipe, 1 serving is considered to be 100g.
  • You can use mizithra instead of anari.
  • Olive oil spray will give the perfect crust, but it is optional.
  • To avoid any risk of sticking, place parchment paper at the bottom of the baking tray.
  • Oven setting: fan assisted with top and bottom heating elements.
