These refreshing cucumber boats are filled with a creamy mixture of sardines, light cream cheese, red onion, parsley and lemon. The recipe makes four boats and works well as a snack or appetizer.

Directions

  1. 1. Drain the liquid from the can, place the sardines in a bowl and mash them with a fork.
  2. 2. Add the cream cheese, red onion, parsley, olive oil, lemon juice, salt and black pepper, then mix.
  3. 3. Optionally, refrigerate for a few minutes to allow the ingredients to combine.
  4. 4. Cut the ends off the cucumbers. Remove a thin slice from two opposite sides so the cucumber boats can sit flat, then cut each cucumber in half lengthwise.
  5. 5. Scoop out the flesh from the cucumber boats and fill them with the sardine mixture.
  6. 6. Serve with olive oil, black pepper and parsley.
