  1. Boil the water and add the quinoa.
  2. Once the water is absorbed, cover and set aside.
  3. Blend the cottage cheese with the mustard, olive oil, balsamic vinegar, lemon juice, and salt until smooth.
  4. In a bowl, combine the tomatoes, mango, coriander, raisins, cooked quinoa, and cold cuts.
  5. Pour the dressing over and toss to coat everything evenly.

Notes

  • You can use white quinoa instead of tricolor.
  • I recommend letting the quinoa cool completely before adding it to the salad.
  • The recipe portions are large, so you can divide them into smaller ones.
