  1. Boil the water with the cinnamon, add the stevia, juice, and honey, and stir.
  2. Transfer to a bowl and allow to cool.
  3. Mix the dry ingredients for the dough in a bowl, and in a second larger bowl, first whisk the juice with the baking soda until it foams, then add the zest, olive oil, applesauce, syrup, and water.
  4. Add the dry ingredients to the second bowl and stir.
  5. Knead the dough until it comes together.
  6. Divide into 32 balls and shape them.
  7. Transfer to a baking sheet.
  8. Bake at 175°C for approximately 15 minutes.
  9. Dip the warm melomakarona into the cold syrup.
  10. Serve with honey and walnuts.

Notes

  • In this recipe, 1 serving is considered to be 1 melomakarono.
  • If you want the syrup to be thicker, use more honey.
  • Not all of the syrup will be used, but it is better to make the full amount so it doesn't cool down before you soak all the melomakarona.
  • You can use olive oil instead of the applesauce.
  • You can use cognac in the dough instead of the syrup and water.
  • You can also shape the melomakarona using a fork or a slotted spoon.
  • Oven settings: 175°C heating elements for 15-18 minutes.
  • Dip the hot melomakarona into the cold syrup for 30-60 seconds, add the honey and walnuts, and let them rest for a few hours.
  • The macronutrients do not include the additional honey and walnuts.
