These low-calorie rice paper nachos are coated with a seasoned mixture of eggs and egg white before being baked until crisp. They make one easy snack with 193 calories, using approximately half of the prepared egg mixture.

Directions

  1. Preheat the oven to 200°C using conventional heat.
  2. Add the eggs, egg white, salt, black pepper, garlic powder, onion powder, paprika and optional chilli powder to a bowl. Whisk until combined.
  3. Cut the rice paper sheets into small triangles.
  4. Dip each rice paper triangle into the egg mixture for a few seconds.
  5. Allow any excess mixture to drip off, then arrange the triangles in a single layer on baking trays lined with baking paper. Leave enough space between them so they do not overlap.
  6. Bake for approximately 8–10 minutes.
  7. Remove the nachos from the oven and allow them to cool for 5 minutes before serving.
