  1. Clean the shrimp and cut them into small pieces.
  2. Soak the vine leaves in hot water, drain them, and set aside.
  3. Saut茅 the onion, shrimp, and spices over high heat.
  4. Lower the heat and add the tomato juice/sauce.
  5. Once the sauce thickens, let it cool slightly and add the rice, parsley, olive oil, lemon juice, and spices, and stir.
  6. Take 32 vine leaves, place the filling in the center, and roll them tightly.
  7. Place them in a pot and add enough water to cover them.
  8. Cover with a lid and cook over medium heat until the liquid is absorbed.

Notes

  • You can use frozen shrimps.
  • Cover the stuffed vine leaves (koupepia) with a small plate so they don't open during cooking.
  • Cook the koupepia for approximately the amount of time indicated on the rice packaging, and if the water has not been absorbed, leave them for a bit longer.
