  1. Clean and peel the apples.
  2. Slice them thinly using a mandoline and transfer to a large bowl.
  3. Add the orange zest and juice and toss to combine.
  4. For the batter, place the eggs, olive oil, milk, vanilla extract, stevia, cinnamon, nutmeg, and flour in a blender and blend until smooth.
  5. Transfer the batter to the bowl with the apples and stir until they are evenly coated.
  6. Line a cake tin with parchment paper, transfer the contents of the bowl, and pour in any remaining liquid.
  7. Bake in the oven at 170°C for approximately 60 minutes.
  8. Optionally, once baked, brush with warm apricot jam to provide a glaze and extra flavor.

Notes

  • If you want it to be higher in protein, use only 50g flour + 1 scoop vanilla protein.
  • Tin dimensions: 8.5x22x7.5cm.
  • You can layer the apple slices one by one in the tin, but I believe it is very time-consuming.
  • Check the color at 40-45 minutes of baking, and if it is quite dark, place a piece of aluminum foil over the tin without sealing it.
  • Oven settings: 170°C heating elements.
  • The jam is not included in the macronutrients.
