Directions

  1. Blend the dates in a blender with the peanut butter, cocoa, and protein powder.
  2. Transfer to a pan, press the mixture down to make it compact, and place in the refrigerator.
  3. Blend the remaining dates, peanut butter, and water until they become a paste.
  4. Transfer the paste to the pan and spread it evenly.
  5. Refrigerate for 1-2 hours to let the ingredients set, then cut into 8 bars.
  6. Melt the dark chocolate and spread it over the bars.
  7. Optionally, top with peanut butter and refrigerate for at least 30 minutes.

Notes

  • In this recipe, 1 serving is considered to be 1 bar.
  • If the dates are too dry, soak them in lukewarm water for 10 minutes before using.
  • You can use dark chocolate with stevia for even less sugar.
  • The macronutrients do not include the peanut butter topping.
