  1. 1. Mix the yogurt, milk, protein powder, yeast and stevia.
  2. 2. Add the flour, salt, mehlep, mastic, and cinnamon and mix.
  3. 3. Knead until the dough becomes elastic, place it in a greased bowl, cover, and let it rise for 60-90 minutes.
  4. 4. Prepare the syrup so it can cool in time, by combining the water, stevia, carob syrup, lemon juice, cinnamon stick, and lemon peel in a small saucepan.
  5. 5. Place over medium heat and remove from the heat 2 minutes after it comes to a boil.
  6. 6. For the filling, mix the milk and protein powder in a bowl.
  7. 7. Add the tahini, honey, carob syrup, and cinnamon and mix until smooth.
  8. 8. Deflate the dough, divide it into 8 pieces, and roll each one into a thin sheet.
  9. 9. Spread the filling over the entire surface of each sheet and roll it up.
  10. 10. Twist the ends of the roll in opposite directions while stretching it to create a long twisted rope.
  11. 11. Coil both ends inward toward the center and place one coil over the other.
  12. 12. With slightly wet hands, press down so they become one and transfer to a non-stick baking tray.
  13. 13. Cover and let them rise for 30-45 minutes.
  14. 14. Bake for 30-35 minutes.
  15. 15. As soon as they come out of the oven, brush with the cold syrup and let them cool slightly.

Notes

  • In this recipe, 1 serving equals 1 tahinopita.
  • Optionally, before kneading the dough, let it rest for 10-15 minutes so the flour can hydrate.
  • Oven settings: 175°C conventional heat.
