  1. 1. Add the eggs and egg whites to a bowl and whisk.
  2. 2. Add the halloumi, dry and fresh anari, flour, semolina, stevia, mahlepi, mastic, baking powder and raisins, and mix until combined.
  3. 3. Cover and refrigerate for 30–60 minutes.
  4. 4. For the dough, mix the yogurt, flour, mahlepi, mastic and baking powder.
  5. 5. Add the olive oil and knead very well for about 10 minutes until the dough becomes smooth and elastic.
  6. 6. Divide the dough into 12 equal pieces, flour a surface, and roll out each piece.
  7. 7. Dip the bottom of each dough piece into wet sesame (see notes).
  8. 8. Add the filling, fold the edges inward to form a triangle, and seal with a fork.
  9. 9. Transfer to a baking tray, brush with beaten egg, and optionally sprinkle extra sesame.
  10. 10. Bake in a preheated oven at 180°C for 25–30 minutes or until golden.

Notes

  • In this recipe, 1 serving equals 1 flaouna.
  • To make the dough easier to handle, let it rest for 15 minutes before adding olive oil.
  • For the wet sesame, boil water, remove from heat, add juice from 1/2 lemon and the sesame seeds, mix, let sit for 5 minutes, drain, and transfer to a plate.
  • The wet sesame process keeps the sesame white even after baking.
  • From the 200 g sesame, you will use about 60–70 g, but using the full amount makes handling easier.
