  1. 1. Wash and dry the sweet potato.
  2. 2. Wet 2 pieces of paper towel and squeeze out the excess water.
  3. 3. Wrap the sweet potato in the paper towel, place it on a plate, and microwave for about 10 minutes, flipping halfway through.
  4. 4. Let it cool slightly, cut lengthwise, and carefully remove the flesh.
  5. 5. Add the sweet potato flesh to a blender with the cream cheese, honey, protein powder, and vanilla, and blend until smooth.
  6. 6. Transfer the mixture back into the 2 sweet potato halves and spread evenly.
  7. 7. Melt the chocolate, let it cool slightly, and spread it over each piece.
  8. 8. Optionally, sprinkle with flaky salt.
  9. 9. Refrigerate for 1-2 hours or longer until set.

Notes

  • You can discard the skin after removing the flesh and serve the mixture in bowls instead.
  • Microwave settings: 800W.
