This high-protein no-bake chocolate tart combines a firmly pressed biscuit and applesauce crust with a smooth cocoa filling made from hard-boiled eggs, yogurt, almond milk and chocolate protein powder. The recipe makes four slices and requires no baking, only sufficient chilling time for the filling to set.

Directions

  1. Crush the biscuits in a blender and transfer them to a bowl.
  2. Add the applesauce and mix thoroughly.
  3. Line the tart tin with non-stick baking paper. Transfer the crust mixture to the tin and press it down very firmly.
  4. Use your fingers to form the sides of the crust, continuing to press the mixture firmly into the tin.
  5. Refrigerate or freeze the crust for 15 minutes.
  6. To prepare the filling, add the eggs, yogurt, almond milk, cocoa powder, protein powder, stevia, salt and vanilla extract to a blender. Blend until completely smooth.
  7. Transfer the filling to the prepared crust and spread it evenly.
  8. Cover the tart tin and refrigerate for five hours, allowing the filling to set.
  9. Remove the tart from the tin. Optionally, spread cream cheese over the top and finish with grated dark chocolate couverture.
