Directions

  1. Add the flour and yeast to a large bowl and mix.
  2. Add the yogurt, milk, 15 ml olive oil and salt, then mix until a dough begins to form.
  3. Knead for 5–10 minutes, until the dough becomes elastic. Alternatively, use a stand mixer fitted with a dough hook.
  4. Transfer the dough to an oiled bowl, cover it and leave it to rise until doubled in size, approximately 60–90 minutes.
  5. Ten minutes before deflating the dough, melt the light butter in the microwave or a small saucepan. Allow it to cool slightly and transfer it to a bowl.
  6. Add the remaining 20 ml olive oil, garlic and parsley to the melted butter and mix.
  7. Deflate the dough, cut it into small pieces and shape them into balls.
  8. Dip each ball first into the garlic mixture and then into the grated cheese.
  9. Line a loaf tin with non-stick baking paper, transfer the balls to the tin and stack them.
  10. Cover and leave them to rise for another 30–45 minutes.
  11. Bake at 175°C for approximately 20–30 minutes.
  12. Allow the bread to cool for 5 minutes before removing it from the tin.
