Directions

  1. Crush the almonds in a blender and transfer to a bowl.
  2. Add the flour and baking powder, and stir.
  3. In a second larger bowl, add the eggs, stevia, olive oil, puree, juice, syrup, and zest.
  4. Whisk well until combined.
  5. Add the dry ingredients and mix just enough for the mixture to come together.
  6. Grease a round cake tin and pour in the mixture.
  7. Wrap the coin in aluminum foil, place it in the mixture, and cover it with the batter.
  8. Preheat the oven to 160°C using the upper and lower heating elements and bake for approximately 45 minutes (see notes).
  9. Sprinkle with powdered sugar or erythritol that has been pulsed in a blender, and decorate the Vasilopita as desired.

Notes

  • If at 15 minutes cracks start to form around the edges, cover it with a piece of aluminum foil without sealing it, and check again at 50 minutes and not any sooner.
  • Tin dimensions: 21cm diameter.
  • You can replace the applesauce with olive oil, but you will need to increase the stevia; otherwise, it won't be sweet enough.
