  1. In a bowl, combine the egg, applesauce, warmed milk, vanilla extract, yeast, sweetener, mahlab, and mastic, and whisk them together.
  2. Add the flour, mix until the dough comes together, and let it rest for 40-60 minutes.
  3. Divide the dough into 3 pieces and shape them into long logs of equal size.
  4. Join them at one end and braid them together.
  5. Cover and let the braid rest for 30 minutes.
  6. Brush with beaten egg white.
  7. Sprinkle with almond flakes.
  8. Bake in the oven at 170掳C for 12-15 minutes.

Notes

  • In this recipe, 1 serving is considered to be the whole tsoureki (sweet bread).
  • The milk should be lukewarm to activate the yeast, so warm it slightly before using it.
  • You can add another 1 tsp of mahlab powder for a more intense flavor.
  • Knead the dough for at least 5-10 minutes until it comes together.
  • Oven setting: fan assisted with top and bottom heating elements or fan only.
