These homemade Twix-style protein bars combine an oat and vanilla protein base with a peanut butter and honey middle layer and a stevia-sweetened chocolate coating. The recipe makes eight bars.

  1. 1. For the base, place the oats, protein powder, peanut butter, honey and almond milk in a bowl and mix.
  2. 2. Line an 18 × 12 cm container with non-stick baking paper, transfer the base mixture to it and press it down very firmly.
  3. 3. For the middle layer, place the peanut butter, honey, vanilla and salt in a bowl and mix.
  4. 4. Transfer it to the container and spread the middle layer over the base.
  5. 5. Freeze for 30–60 minutes, ideally for 60 minutes so the layers have enough time to firm up.
  6. 6. When 10 minutes remain, melt the couverture chocolate over a bain-marie and allow it to cool slightly.
  7. 7. Spread a layer of chocolate over the mixture in the container and reserve the remaining chocolate for covering the bars.
  8. 8. Remove from the container and cut into eight bars.
  9. 9. Cover the exposed sides of each bar with the reserved chocolate.
  10. 10. Refrigerate for 30 minutes to allow the chocolate to set.
