  1. For the cookie dough, add the flour, protein powder, stevia, and baking powder to a bowl and mix.
  2. Add the egg and applesauce and mix until combined.
  3. Chop the chocolate into small pieces, add it, and mix.
  4. Cover and place in the freezer for 15–20 minutes.
  5. For the base, add the flour, protein powder, cocoa powder, stevia, and baking powder to a bowl and mix.
  6. Add the yogurt, milk, and finely chopped chocolate and mix until combined.
  7. Optionally, spray a baking pan with oil and transfer the base mixture.
  8. Using an ice cream scoop, place the cookie dough unevenly over the base.
  9. Bake in a preheated oven for strictly 8–12 minutes, then let it rest for 5 minutes outside the oven.
  10. Optionally, serve with ice cream.

Notes

  • Do not overbake, or it will lose its soft and gooey texture.
  • Pan diameter: 20 cm.
  • Oven settings: 175°C conventional heat.
