  1. For the dough, combine the yogurt, flour, baking powder, and salt in a bowl, and stir.
  2. Knead by hand until the dough comes together and let it rest for about 15 minutes.
  3. For the filling, grate the halloumi and anari cheese into a bowl using a small grater.
  4. Add the yogurt and mint, and stir.
  5. Once the dough has rested, divide it into 3 pieces.
  6. Flour a surface and roll out each piece into a sheet, making it as long and thin as possible.
  7. Spread the filling across the entire surface of the sheet, leaving a small margin at the edges.
  8. Roll loosely starting from the long side, stopping just before the empty margin.
  9. Whisk the egg, brush the margin, and seal the roll.
  10. Transfer to a non-stick baking tray, brush with the egg wash, and sprinkle with sesame seeds.
  11. Bake at 160掳C for 15-20 minutes or until golden brown.

Notes

  • In this recipe, 1 serving is considered to be 1 halloumoti.
  • Oven setting: fan assisted with top and bottom heating elements.
