  1. 1. Place the beef in the freezer briefly to firm up, then slice into thin strips along the grain, or ask your butcher to prepare it for jerky.
  2. 2. Transfer to a bowl, add soy sauce, honey, pepper, garlic powder, onion powder, paprika, and chili flakes, and mix well.
  3. 3. Place in a sealed bag with the marinade and refrigerate for 6–24 hours.
  4. 4. Remove from the bag, pat dry if necessary, and skewer the strips through one end, leaving space between them.
  5. 5. Place the skewers on the oven rack so the meat hangs down, and place a tray below to catch drippings.
  6. 6. Bake for about 3 hours with the oven door slightly open.
  7. 7. Once done and flexible without breaking, remove from the oven.
  8. 8. Remove from skewers and let cool completely.

Notes

  • In this recipe, 1 serving is considered to be 100g.
  • To keep the oven door slightly open, place a wooden spoon or towel in the door.
  • Oven settings: 70°C fan with or without heating elements.
