Directions

  1. Boil the pasta in hot salted water for 1-2 minutes less than the package instructions.
  2. Remove from the heat.
  3. In a blender, combine the tofu, coconut milk, lemon juice, nutritional yeast, and spices, and blend until smooth.
  4. Transfer the mixture to a pan over medium-high heat.
  5. Once it reaches a boil, add the finely chopped spinach and stir until wilted.
  6. Thin the sauce with the hot water and add the drained pasta.
  7. Toss well to ensure the sauce coats everything evenly.
  8. Remove from the heat and optionally serve with crushed walnuts.

Notes

  • I suggest 4-5 tablespoons or 2-3 ladles of hot water, but you can thin the sauce or not as you wish.
  • Optionally, serve with crushed walnuts.
