High-Protein Double Cheeseburger with Fries

This recipe makes two double cheeseburgers, each prepared with two lean beef patties, two slices of melted light cheese, lettuce and an optional lighter burger sauce. They are served with crispy baked fries and a creamy garlic-Parmesan dipping sauce.

Directions

  1. Preheat the oven to 220°C using conventional heat.
  2. Reserve 50 ml of the milk and whisk it together with the 10 g corn starch until completely smooth. Set aside.
  3. Cut the potatoes into evenly sized fries and transfer them to a bowl.
  4. Spray the potatoes with cooking oil for 6 seconds. Add the salt, black pepper, paprika and corn starch, then mix until evenly coated.
  5. Spread the fries in a single layer on a baking tray and bake for 15–20 minutes, or until golden.
  6. To prepare the optional burger sauce, combine the mayonnaise, Dijon mustard, chopped pickles, salt and black pepper. Set aside.
  7. Divide the beef mince into four 150 g patties. Season them with the salt and black pepper.
  8. Cook the patties over high heat for 2–3 minutes on each side.
  9. One minute before the patties finish cooking, place one slice of light cheese over each patty and cover the pan until the cheese melts. Remove the patties from the pan.
  10. Reduce the heat. Add the light butter and briefly sauté the chopped garlic.
  11. Add the remaining 250 ml milk, followed by the corn-starch mixture, Parmigiano Reggiano, paprika, onion powder, black pepper and salt.
  12. Stir until the sauce thickens, then mix in the chopped parsley.
  13. Spread the dipping sauce over a serving platter.
  14. Assemble two double cheeseburgers. Spread the optional burger sauce over each bun and add two cheese-topped patties, half of the chopped lettuce and some additional sauce.
  15. Cut each double cheeseburger in half and arrange the halves over the dipping sauce.
  16. Add the baked fries and, if desired, garnish with a little reserved Parmigiano Reggiano and chopped parsley.
