Directions

  1. Take the duck breast and score the fat lengthwise and crosswise.
  2. In a bowl, combine the hoisin sauce, apple cider vinegar, water, honey, Chinese five-spice, garlic, and ginger, and stir.
  3. Marinate the breast for at least 30 minutes.
  4. Take the spring onions and the cucumber and cut them into thin strips.
  5. Sprinkle salt over the fat side of the duck.
  6. Sear the breast (fat-side down) for about 5 minutes or until the skin becomes crispy.
  7. Transfer to a non-stick baking tray.
  8. Bake at 180掳C for 6-8 minutes.
  9. Cut into slices or thin strips.
  10. Fill the pancakes/pitas with the vegetables, the duck, and the duck sauce.

Notes

  • In this recipe, 1 serving is considered to be 1 pita.
  • Do not use marinade on the skin.
  • For more flavor, let the marinade sit overnight or at least for a few hours.
  • Oven setting: top and bottom heating elements.
  • Prepare the pitas according to the package instructions. Most need 30 seconds in the microwave.
