  1. Remove the ends from the cucumbers.
  2. Cut them into thin slices using a mandoline and dry them with paper towels.
  3. Transfer them to a bowl, add the soy sauce, sesame oil, and rice vinegar, and toss to combine.
  4. Serve sprinkled with sesame seeds.

Notes

  • The cucumber slices must be dried very well.
  • The macronutrients do not include the sesame seeds.
