  1. 1. Add the chicken, water and salt to a pot over high heat.
  2. 2. Once it comes to a boil, reduce heat, cover, and simmer for about 1 hour.
  3. 3. Remove 1 cup of broth and set aside to cool slightly.
  4. 4. Remove the chicken, shred it, and make sure no residues remain in the pot.
  5. 5. Add the rice and cook for 12–15 minutes.
  6. 6. Separate the egg whites from the yolks and beat the whites using a hand mixer.
  7. 7. Add the yolks and continue mixing.
  8. 8. Add the lemon juice and mix.
  9. 9. Slowly add the reserved broth while mixing continuously.
  10. 10. Once the rice is cooked, remove the pot from heat.
  11. 11. Gradually add the avgolemono mixture into the pot, stirring constantly until fully incorporated.
  12. 12. Serve with the chicken and black pepper.

Notes

  • You can strain the broth after removing the chicken to eliminate impurities.
  • To prevent curdling, remove an extra cup of broth after the rice is cooked, let it cool for 2–3 minutes, and gradually add it to the egg-lemon mixture before combining with the pot.
