Directions

  1. Place the coarsely chopped vegetables, olive oil, and spices in a baking tray.
  2. Toss to combine and roast at 200°C for 40-50 minutes.
  3. Allow them to cool slightly.
  4. Place them in a blender along with the stock (dissolved in hot water), the cottage cheese, and optionally the nutritional yeast.
  5. Blend until the mixture is smooth and homogenized.
  6. Transfer to a pot.
  7. Simmer over medium-high heat until hot, stirring occasionally.

Notes

  • Vegetables were weighed after cleaning and peeling.
  • If you have the time, stir the vegetables halfway through the cooking time to ensure they roast evenly in the oven.
  • To prevent the cottage cheese from curdling, I recommend preparing the broth, letting it cool, blending it with the cottage cheese, and then adding the roasted vegetables and nutritional yeast.
