  1. Pulse the onion, bell pepper, garlic, and parsley in a blender.
  2. Drain the liquids and transfer to a bowl.
  3. Add the ground meat, tomato paste, oil, and spices, and mix well.
  4. Spread the mixture onto a non-stick baking tray.
  5. Shape by scoring into 6 long strips.
  6. Bake for 15 minutes at 200°C using upper and lower heating elements, and for another 5 minutes on the grill setting.
  7. Prepare the salad by mixing the tomato, onion, and parsley with the oil, lemon, salt, and paprika.
  8. Warm the pitas and fill with the salad, the kebab, and the sauce.

Notes

  • Drain the liquids from the vegetables thoroughly, otherwise the kebab won't turn out crispy due to the moisture released on the grill.
  • Spread the mixture very well because it will shrink once cooked.
  • Pan dimensions: 36x28cm.
