  1. Place the onion, coriander, and parsley in a blender and process until pureed.
  2. Transfer to a bowl and add the minced meat, zucchini, oats, and spices.
  3. Mix until well combined, cover, and refrigerate for 30 minutes.
  4. Divide the mixture into 20 meatballs and transfer them to a non-stick baking tray.
  5. Spray with oil spray and bake for 20-25 minutes at 200掳C.
  6. For the sauce, combine the yogurt, juice, zest, garlic, coriander, parsley, salt, and cumin in a bowl, and stir until well blended.

Notes

  • In this recipe, 1 serving is considered to be 5 meatballs.
  • I prefer beef mince instead of pork because of the meat quality, but you can also use a combination.
  • Use paper towels to remove excess moisture from the grated zucchini so that the mixture doesn't become too wet.
  • Oven setting: top and bottom heating elements.
