Directions

  1. Wash and dry the apricots, remove the pits, and cut into small pieces.
  2. Transfer to a deep pan with the water and boil over medium heat until they soften.
  3. Transfer to a blender and blend, or for convenience, puree with a hand blender.
  4. Dissolve the gelatin in the water, and once it blooms, add it to the pan.
  5. Lower the heat and add the juice, lemon, and stevia.
  6. Boil for 5 minutes and allow to cool.
  7. Transfer to a container and chill in the refrigerator for at least 8 hours.

Notes

  • In this recipe, 1 serving is considered to be 100g.
  • I recommend stirring the pieces occasionally so they do not stick to the bottom.
  • Once removed from the heat, let it cool for 5 minutes, transfer to the container, and wait for it to reach room temperature before sealing and placing in the refrigerator.
