These apple and chocolate baked oats combine banana, grated red apple, protein powder and chunks of stevia-sweetened chocolate in a soft, sliceable breakfast bake. The recipe makes six servings, each with 16 g protein and 333 calories.

Directions

  1. 1. Grate the apple and pat it dry with kitchen paper. Finely chop the couverture chocolate.
  2. 2. Place the banana in a large bowl and mash it thoroughly.
  3. 3. Add the yogurt and almond milk, then whisk until combined.
  4. 4. Add the oats, protein powder, stevia, salt, grated apple and most of the chopped chocolate, reserving a little chocolate for the topping.
  5. 5. Stir just until combined, then transfer the mixture to a non-stick 20 × 16 cm baking pan.
  6. 6. Spread the mixture evenly and sprinkle the reserved chocolate over the top.
  7. 7. Bake in a preheated oven at 160°C for approximately 40 minutes.
  8. 8. Allow to cool slightly before slicing into six servings.
