  1. Take a bunch of wild asparagus, remove the woody ends from each, and soak them in hot water for 2-3 minutes.
  2. Transfer them to a cutting board and dry them thoroughly with paper towels.
  3. Cut them into small pieces and set aside.
  4. In a blender, combine the eggs, egg white, cottage cheese, salt, and pepper, and blend until smooth and homogenized.
  5. Saut茅 the asparagus over high heat for 2-3 minutes, then add the egg mixture.
  6. Cook for another 2-3 minutes, stirring constantly.

Notes

  • If you want them to turn out crispier, spray the pan with oil spray before saut茅ing.
