  1. Cut the pork into small cubes.
  2. Place the coriander, vinegar, water, and pork cubes in a bowl.
  3. Mix and let marinate for at least 1 hour or overnight.
  4. Drain the cubes and reserve the marinade.
  5. Dissolve the stock cube in the hot water.
  6. In a small pot over medium-high heat, add the olive oil and cook the cubes until the liquid evaporates.
  7. Add the onion and garlic, and saut茅 until softened.
  8. Add the marinade, the dissolved stock, additional vinegar if desired, salt, pepper, and cinnamon, and stir.
  9. Lower the heat to medium-low, cover with a lid, and cook for 30-40 minutes or until the liquid has evaporated, stirring occasionally.
  10. For the bulgur, dissolve the stock cube in the hot water.
  11. In a small pot over medium-high heat, add the olive oil and saut茅 the onion for 1-2 minutes.
  12. Add the vermicelli and saut茅 for another 1 minute.
  13. Lower to medium heat, add the stock and the strained tomato (passata), and stir.
  14. Once it reaches a boil, cover with a lid, remove from the heat, and let it sit for 5-10 minutes to absorb the liquids.

Notes

  • You can use red wine instead of balsamic vinegar.
