  1. Boil the rice in water along with the salt and stevia.
  2. Before the liquids evaporate completely, cover and remove from the heat.
  3. In a square pan lined with plastic wrap, place a seaweed sheet and half of the cooled rice mixed with the cream cheese.
  4. Cut the ripe avocado into very thin slices.
  5. Transfer them to the pan and add a second seaweed sheet, the remaining rice, and the cream cheese.
  6. Spread well, add the smoked salmon, and place a third seaweed sheet on top.
  7. Cover with plastic wrap.
  8. Refrigerate for at least 2 hours and cut into pieces.

Notes

  • In this recipe, 1 serving is considered to be 1 piece of sushi.
  • Pan dimensions: 17x17cm.
  • If the seaweed sheets are larger than the pan, trim them with a knife to the exact size of the pan.
  • It must be thoroughly chilled so the layers set; otherwise, the pieces will fall apart.
