  1. Blend the chicken, egg, and spices in a blender.
  2. Place in a bowl along with the onion, garlic, carrot, zucchini, parsley, oats, and feta, and mix well.
  3. Spread half of the mixture onto parchment paper.
  4. Place the boiled eggs on top and cover with the remaining mixture.
  5. Spread and roll tightly.
  6. Seal and bake at 180掳C for 40 minutes.
  7. Peel the potatoes and boil until cooked.
  8. Drain the water, add the cream cheese, milk, and salt, and mash until smooth.
  9. Once the meatloaf is baked, remove the paper and optionally, for more flavor, top with tomato juice/sauce and cheese, then bake for another 5-10 minutes until melted.
  10. Divide the meatloaf and the mashed potatoes into 5 servings.

Notes

  • Make sure to dry the carrot and zucchini thoroughly before adding them to the mixture, as they will release moisture and make it watery.
  • You can replace the oat flour with breadcrumbs.
  • Oven setting: top and bottom heating elements.
